  From my understanding, goats milk is 8% milk fat and cows milk is 4%.  It's good to know about that 15% limit but one way around it is add a quarter cup amaretto.  More than half a cup can keep it from freezing.

  If you use cows milk you might want to change the ratio of milk to cream but it should work without doing that.  Experiment, you'll have two batches to enjoy.

Had purchased a mission fig, goat milk ice cream before and wanted to try to make it.  I had some figs from my trees that I dried and thought they would hold together better.  Turned out well and here is the recipe:

2 cups goats milk
1 cup cream
2 eggs
3/4 sugar
1 cup dried figs, minced
1/2 teaspoon vanilla
1/2 teaspoon almond extract
pinch of salt
fresh grated nutmeg to taste (between 1/8 and 1/4 teaspoon)

Beat eggs add sugar, goats milk, figs, salt and nutmeg, heat until thickens slightly stirring regularly.  You could temper the eggs but I was lazy.  Cool, add cream and extracts then chill.  Follow directions on your ice cream maker and enjoy.

  We have a Mideastern store a couple miles away.  I'm in La Mesa, CA just a few miles away from Encanto Farms.  Didn't really have room for the four types of figs I got from Jon but living so close I couldn't help it.

  Haven't tried the rose water though it does sound interesting.  I think I have seen a recipe somewhere for candy made with it.

  Neem oil based products are labeled as a fungicide, miticide and insecticide, not bad for being considered organic.  Fortunately I haven't had to opportunity to try it on fig rust but will be trying it on the powdery mildew that my squash leaves get every year.  A couple brands can be found, Schultz has the garden safe label at Target and Walmart and Lowes carries another brand.  If it works for you look for the concentrate, much better deal as it mixes one ounce to a gallon of water.

  Living only a few miles from Encanto Farms Nursery I don't have to worry about the cold hardiness.  I have a Wonderful and a Utah Sweet that had their best crop last year, branches were bent over resting on the ground.  Both are good but mixing the two makes for some great tasting juice and even better wine.  The tartness can be overwhelming in the wine after the yeast does its work so adding a little sugar to smooth it out again without making it sweet helps.

  I use masking tape with the sticky side out, the tape will break as the tree growsand last around a year.  Apply the tangle foot while wearing some disposable gloves to keep from having to use a solvent to clean your hands.

  I have recently seen a bag of vermiculite that was labeled as asbestos free.  It may not be the vermiculite but depending on the source, the asbestos it may contain.
